Ripe red fruit, flowers, spices, mineral echo and 'crunchy'. Chiroubles is one of the crus in Beaujolais, an area that offers more rarefied reds, a little for the height of its hills, a little for the temperatures, lower on average. Vin de Kav is a faithful manifestation of the climatic trends in the area and it’s characterized by finesse and dynamism, played on the dichotomy between ample freshness and fine flavor.

The opposition to the industrial wine in Beaujolais dates back to the '80 with the "Gang of Four of Morgon": Marcel Lapierre, Jean Foillard, Guy Breton and Jean-Paul Thévenet.
The four decided to limit the intervention in the vineyard and the winery, with the objective to reproduce authentic and natural wines.
Karim Vionnet is the disciple of Guy Breton, with whom he worked until he bought his first 2 hectares of vineyards in 2006 and started business on his own.
